Lemon Pepper Salmon

I thought I would start off the week with a really healthy recipe for you all! It is light, tasty and really versatile! It’s been 100 degrees here for the past few days and being outside sweating while my kids enjoy the new (to us) trampoline and playground in our backyard makes me want light meals!

This recipe is one I put together when Austin and I were both working full time and needed a healthy home-cooked dinner. It amazes me how much we ate out in those days! It is really easy to make and you can serve it any number of ways! My favorite way is over a bed of rice with steamed broccoli or green beans. I’ve also enjoyed it over a salad with a light Italian or Greek dressing!

Salmon is SO good for you as it contains healthy oils that are great for brain and heart health! It is also a wonderful source of protein. When you serve it over a healthy grain like brown rice or quinoa and with a steamed green vegetable, it doesn’t get much healthier than that!

Salmon can be one of the most expensive items on a menu at a restaurant at around $20, but for the skinless Atlantic Salmon filets that I can get at my local Walmart, each filet comes in at just under $5, which is pretty budget friendly!

If it is available and your budget allows, to save time, I recommend getting salmon filets that are already skinless. If that isn’t an option, however, it is super easy to get the skin off!

  • Put 2-3 Tbsp of vegetable or olive oil (depends on how many filets you have!) into a large nonstick skillet over medium heat

  • After about a minute, add the salmon filets, skin down. Leave them in the skillet for 4-5 minutes

  • Using tongs, remove the filets and place them on a plate or cutting board skin up.

  • With a butter knife, simply separate the skin from the salmon and discard. Make sure you get all the scales and the gray slimy layer off the filet. You just want gorgeous, orange meat!

Whether you bought skinless filets or you just got the scales off your filets, you’re ready to make this delicious, healthy recipe!

What You Will Need:

  • Broiling Pan (if you don’t have one, this is just like mine, and I love it!)

  • Large plate

  • Small bowl

  • Juicer (like this squeezer or this juicer)

  • Tongs
