Chicken Salad

When it comes to chicken salad, I have found that most people either love it or hate it! I’m in the camp that loves it, and I truly think it because I grew up with this delicious recipe!
This recipe is simple, fresh and tasty. It only has chicken, celery (for a little freshness and crunch), mayo, salt, pepper and lemon juice! No fruits or nuts in this recipe!
This particular chicken salad recipe came from a friend of my Grandmommy! My Granddaddy was a family doctor in a smaller city from the mid 1950’s until 2005 (yes, he was nearly 80 when he stopped working!). Like I’ve mentioned before, my Grandmommy loved to entertain and she was a key member of the community Medical Auxiliary, made up of the wives of the doctors in town. They hosted luncheons and pulled out all of their sterling silver trays, china and glassware for their monthly meetings. Many times two of the members would host together and one of those events in the 1960s is where my Grandmommy got this recipe!
I love imagining all the ladies dressed in beautiful dresses with pearls and heels with hair fresh from the beauty parlor gathering once a month together to plan fundraisers and events. Sometimes I wish that ladies still dressed up to go places, but I appreciate my comfort and not having to do full glam or wear heels every day!
Even though the world has changed a lot since then, Chicken Salad Tea Sandwiches or Chicken Salad Cups (we use premade phyllo cups and put a half of a grape on top) have been a staple at bridal showers, baby showers, tea parties and other events my family has hosted over the years! People love this recipe!
You can also make a big bowl of this chicken salad to make sandwiches or serve it over a salad for a low carb lunch! My girls really enjoy this recipe and I’ve packed it in their lunchboxes several times.
