Chicken Fajitas

I’m so excited to share one of my original recipes with you today! Chicken Fajitas! This probably falls more into the “Tex Mex” category rather than authentic Mexican cuisine, but it is flavorful, healthy and has a little kick.

I was actually inspired to make this because I decided that I wanted to make fajitas one day! I’m usually not so spontaneous, but I’m glad I was that day! There really isn’t a fun backstory to this recipe, except that it was one of my first recipes that I felt brave enough to experiment and create! I’m usually a recipe girl but I’m finally at a place in my life where I know what seasonings and flavors go well together.

This is a clean recipe with protein, vegetables, and spices wrapped in warm corn tortillas! I haven’t put any measurements of spices in the recipe so you can adjust it to your taste. However, don’t be afraid to season! Very rarely have I had something that is over-seasoned, but I have had a lot of food that is under seasoned.

For a low carb option, you can serve it over a bed of greens. You can also serve it over tortilla chips and some shredded cheese for some tasty nachos! You can serve it in the corn tortillas with lettuce, pico de gallo, cheese or cilantro! Make this recipe your own!

What You Will Need:

  • Large Cast Iron or Nonstick Skillet with Lid

  • Cutting Board

  • Sharp Knife

  • Tongs

  • Spatula

  • Griddle or Frying Pan
